YHB is proud to celebrate with Principal Chris Frye on his victory at the Associated Builders and Contractors (ABC) Chili Cook-Off competition. Chris brought home gold while representing YHB at this years ABC Virginia region cook-off. Below you will find Chris’ award winning secret recipe that he so graciously shared with us.

Hokie Turkey Chili

Dice one-half of a large red onion.

Heat two tablespoons of vegetable oil in a large cooking pot.

Add onions to pot and sauté for 2-3 minutes.

Add one pound of ground turkey and brown for 5 minutes until cooked evenly through.

Use a spatula to chop up turkey into fine pieces (like taco meat).  Avoid leaving large chunks.

Add one can of chicken broth.

Add one can each of dark red kidney beans, black beans, and garbanzo beans (all drained).

Add one can of spicy diced tomatoes with juice.

Add a dash (a couple shakes of the shaker) of the following:

Seasoned salt

Regular salt

Black pepper

Onion powder

Chili powder

Cinnamon

Stir everything together and bring to a boil.  Cover the pot and reduce heat to low and simmer for 20 minutes.  Chili is now ready to eat, however, for a prize winning pot, transfer the chili to a crock pot, add one cup of water, one more shake of seasoned salt and black pepper, cover and simmer on low for an additional hour.
